Recipe Ginger Nut Rhubarb Crumble

Here is the recipe from my mum. It is quite easy to make she says.

Ingredients
6 to 8 sticks of rhubarb
6 oz flour
3 oz butter
4 oz brown sugar
4 crushed ginger biscuits

  1. Put the flour into a bowl and rub in the butter until it is like breadcrumbs then mix in the crushed biscuits and half the sugar.
  2. Cut the rhubarb into inch chunks and put in a baking dish. Cover with the rest of sugar.
  3. Cover the rhubarb with the crumble and bake for 45 mins at 170 C
  4. Dish it up with custard or cream

OK I cooked the crumble today and it turned out just fine. The amount of sugar is just about right for me as I prefer to keep it sharp. The ginger taste comes through nicely. Here is a photo. With your permission, I will add it to you recipe.
