A pretty dessert which is very easy to make. Use the best quality grapes you can find.
Ingredients (makes 2 x 100ml moulds)
225g seedless purple grapes
1/2 lime, juiced
70g sugar
60ml water
5g powdered gelatine
50 ml double cream

Method
- Gently simmer grapes, lemon juice, sugar and water in a saucepan for 20 mins. Use a potato masher to squash the grapes down to release their juice.
- Sieve the mix using the back of a large spoon to press the the pulp down. You should now have 160 ml of grape juice. If less then add some water.
- Return the grape juice to a clean saucepan and heat gently. Remove from heat, sprinkle gelatine over the top and whisk.
- Allow to cool slightly and then stir in the cream.
- Pour into moulds an allow to set in the fridge for an hour before turning out.
