Recipe Green/spring garlic aioli

Ingredients

1 egg yolk
1 stalk part of green/spring garlic (or 2-3 cloves dried garlic)
1.5 tsp fresh lemon juice
1/2 cup good EVOO
1/2 cup neutral flavored oil, like vegetable or avocado
Salt and white pepper to taste

Directions

Remove any dried out or damaged outer leaves of the stalk. Cut off the really dark green parts. Cut in half lengthwise and wash out. You are basically treating the stalk like a leek. Finely chop, then use a mortar and pestle or small food processor to very finely chop/grind the stalk.

Scrape the stalk pieces out of the food processor. Place the egg yolk, lemon juice, and some salt and pepper in the food processor bowl. Turn processor on high. Through the feed tube, very, very slowly drizzle the oil until an emulsion forms. After the emulsion forms, you can add the oil just a little more quickly. Add the very finely chopped/ground green garlic stalk and blend. Taste and adjust seasoning.

Serving Suggestion

We served the aioli with steamed new potatoes, shrimp, asparagus, carrots, and baby sugar snap peas. Fresh vegetables were zucchini, mushrooms, endive leaves, radishes and cucumbers. HB eggs and toast were also served.
