I have had this recipe from a magazine for donkey's years... It is one I loved when I could have buttermilk and recently I have come across an non-dairy buttermilk substitute that is also fermented so may just work as a substitute in this recipe. <licks lips>
This is a really simple and easy recipe. The dried fruit can anything really, replaced with savoury items such as bacon or cheese or even omitted completely and you can do this on a open fire as well.
Griddle Scones
Ingredients
150g/5oz plain flour
1 tsp caster sugar
1 oz mixed dried fruit (or chocolate chips)
125-150ml (4-5oz) Buttermilk
Method

Griddle Scones
Ingredients
150g/5oz plain flour
1 tsp caster sugar
1 oz mixed dried fruit (or chocolate chips)
125-150ml (4-5oz) Buttermilk
Method
- Sift the flour and caster sugar into a bowl.
Add in the fruit (or chocolate chips) and mix. - Make a well in the middle and pour in about 3/4 of the buttermilk.
- Stir with a wooden spoon to make a firm dough, adding more buttermilk if required.
- Turn out on to a floured surface and gently form into a ball, then flatten to form a circle about 20cm in diameter and 5cm thick
- Cut into 6 triangles
- Gently heat a griddle or heavy bottomed frying pan and sprinkle with a little flour. When the flour starts to brown the pan is hot enough.
- Put the scones onto the pan and leave for 6-8 minutes before turning and leaving for another 6-8 minutes. They should have risen and be a pale golden colour.
- They can be served hot or cold with butter & jam.
