Ingredients:
1 ripe avocado
1/2 red onion
1 clove garlic
4 ají dulce (sweet chiles) or 1/2 green bell pepper
Handful of cilantro or parsley, or both
A splash of white wine vinegar
Salt and pepper to taste

Method:
  • Peel and pit the avocado. Dice the red onion. Crush the garlic. Cut the ají dulce (or bell pepper) in half and remove the seeds. roughly chop the cilantro (and/or parsley)
  • Put all the ingredients into a blender, add the vinegar, salt and pepper, and pulse until smooth.
  • Serve as an accompaniment to a BBQ, grilled meat or chicken, or with tostones (fried green plantain) or casabe ( yuca bread).
