My butcher friend makes my bacon in .500gm packs for $10 ea. This is old fashioned and has a beautiful Smokey taste. My wife has it every sat morning (tomorrow)
It crisps up very well.

Yeah..from along the side, maybe?...I googled New Zealand bacon and I see they have a shoulder bacon and something called a Middle Bacon....
 
Yeah, but I believe pancetta is all belly.

It can be rolled or left flat... salted, then hung/cured...actually one of the easiest and safest charcuterie cuts to do...the flat stuff is ready in a few weeks..can be done in your fridge or a cool basement..
