Burrata is a new kid on the block here in the UK and aside from specialist markets in London, the only place I can get it is from Ocado (on-line supermarket). So what is it? Its a fresh Italian cheese (burrata means 'buttered' in Italian). It looks a bit like mozzarella but when you cut into it the creamy, buttery middle spills out. Its really delicious. Best served as a starter, I think. Cooking with it would be wrong! Here is what I did:

Burrata with Tomatoes, Basil Oil and Cinnamon Balsamic

Ingredients

Sliced tomatoes
Burrata cheese
Basil oil*
Balsamic vinegar
Cinnamon stick
Salt & Pepper to taste

Method
  • Gently simmer 200ml of balsamic vinegar with the cinnamon stick until the vinegar is thickened.
  • Remove from heat and allow to cool.
  • Slice tomatoes, spill and tear the burrata and arrange on the plate as shown.
  • Drizzle with the reduced balsamic and basil oil.
  • Season to taste with salt and pepper.
  • Serve with crusty bread as a starter.

Looks good, but I don't eat tomatoes that often enough to want to make this. :wink:
