Honey Almond Halibut:
Ingredients:
1) Halibut fillet - 4 to 6 Oz.
2) Rice (white) - 1/8 cup dry
3) Honey - 4 tblspns.
4) Lemon juice - 3 tblspns.
5) Cream cheese - 2 tblspns.
6) Cucumber - 1/8
7) Radish - 1
8) Dill - 1 tspn.
9) Almonds - 1/8 cup
10) Finger lime caviar - 5 or more, as desired
Procedure:
-- Sauce Preparation --
1) Blend cucumber, radish, lemon juice and cream cheese.
2) Simmer the blend at 175F.
3) Stir until ingredients merge to form a consistent sauce.
4) Stir in honey and dill.
5) Set aside.
-- Topping Preparation --
6) Crush or sliver the almonds.
7) Remove the finger lime caviar and mix with the almonds.
8) Set aside.
-- Preparing the Meal --
9) Boil the rice until tender and drain off excess water.
10) Cook the halibut fillet in the prepared sauce.
11) Turn it occasionally as necessary until done.
12) Cover a serving plate with rice.
13) Lay the halibut fillet over the rice.
14) Spread available sauce over the fish and rice.
15) Top with almonds and finger lime caviar.
16) Serve.
