Ingredients

Marinade:
  • 100 gm tomato puree
  • 1 tsp pureed garlic
  • 2 tblsp Worcestershire sauce
  • ½ teaspoon chili powder
  • 2 teaspoon paprika
  • 1 tblsp apple cider vinegar
  • 500 gm pork ribs
  • Salt and pepper
  • 2 tblsp honey
Method
  • Season the pork ribs both sides.
  • Mix all the marinade ingredients in a small jug.
  • Pour the marinade over the ribs and mix to ensure they are evenly coated.
  • Cover and refrigerator overnight.
  • Preheat the oven to 200 degC.
  • Shake off the excess marinade and place the ribs in a roasting dish.
  • Generously brush the ribs with half the honey.
  • Roast for 50 minutes turning once and applying the remaining honey.
  • Allow to stand for 5 minutes.

You don't find that glazing the ribs before cooking leads to burning for that length of time?

Actually I cook mine in the halogen oven so it's like 10 minutes each side. The original recipe (where the honey is included in the marinade) calls for a cooking time of 60 minutes. I've never attempted the original recipe.
