Honey Polenta Cake:

Ingredients:

1) Polenta - 1 cup
2) Bacon - 1/4 strip
3) Scallion - 1/8
4) Serrano pepper - 1/2
5) Honey - 2 tblspns.
6) Sun dried tomato - as desired
7) Water - as required

NOTE: Makes 1 single serving.


Procedure:

1) Fry the bacon and chop into bits and pieces.
2) Chop up the scallion and Serrano pepper.
3) In a mixing bowl combine all ingredients.
4) Thoroughly stir up all ingredients.

NOTE: Only add enough water to wet the polenta. The mixture should be thick.

5) Press the mixture into a suitable microwaveable bowl that will allow forming a cake
6) Level off the top.
7) Microwave for 1-1/2 minutes.
8) Remove and use a butter knife to separate the sides of the bowl.
9) Invert over a suitable microwaveable serving dish.
10) Top with sun dried tomato.
11) Reheat for 30 to 60 seconds.
12) Serve.
