How do I make a killer grilled cheese Mac and cheese

Seen this pic on Instagram. Ever since I've really wanted to make it. I know how to make a basic mac and cheese but how might I get all those delicious caramelised bits. I just know I I do it it will come out sloppier than that.

Its from Delicious magazine and it has Black Pudding in it. Not to everyone's taste! Personally, I like the concept, though probably not with toast.

The brown bits are caramelised onions.

I don't like mac & cheese on sandwiches or pizza, but this one is really great. We make our own tasso so it is usually on hand.

A grilled mac and cheese sandwich would really not be difficult to do, although somewhat time consuming for a sandwich. You just make sturdy mac and cheese, and put it on some toast with cheese and griddle it -- or I would use my panini press. You are not reinventing the wheel, you are just using a different method to make your wheel.

Seriously, I can see this being a really fun way to spend a rainy day at home.
