Please share your favorite recipes for Lamb.

I think the only thing I’ve ever made with lamb is shepherd’s pie. Possibly some meatballs, but I can’t remember.

I do like it, though. It’s just not something that’s eaten nearly as much here as it is in other places/cultures.

According to the Internet, the US consumes a mere 0.7 pounds of lamb per person per year, while the yearly world average is 85 pounds person per year.
 
I'm hoping that members will share some lamb recipes that I can try.
We love lamb with lemon and garlic.
I want to try lamb - Souvlaki and hish kabob.
