I wasn't quite sure where to put this, I suppose it could go in the Egg & Dairy forum or here. But since it can also be eaten as a dinner, I put it here:

Apparently this is a Cali thing, and it's the first I've ever heard of it out here on the east coast. Admittedly it's not the prettiest of dishes, but I've already made this twice for breakfast the past two days, and I'm loving it.

What's also rather interesting, is that this makes a *lot* of food. I use the equivalent of one hamburger patty's worth of ground beef, along with two eggs, and some diced onions and spinach (and sea salt, black pepper, olive oil, garlic powder, and parmesan) and it makes a really big pile of food, that looks like it was far more than that. It's also pretty filling, which I guess makes sense, since it's basically a protein bomb.

I serve mine with some fresh sliced tomatoes on the side, and a piece of toasted Italian bread.
