Making your own beef stock out of joint bones is one of the easiest ways to get a really healthy broth or stock without paying an arm and a leg for it.
Joint bones have cartilage, when cartilage is dissolved into the stock it supplies a number of good nutrients that help the body build and maintain strong bones and teeth. You know you have a good stock when it turns to jello in the fridge. Making this kind of stock takes a long time though, so a crock pot is a must, but it is totally worth it. It takes about 24hrs on low to fully dissolve the cartilage on a couple of good joint bones. The bones should come out looking totally clean.
Your joint bones often have a lot more fat on them than you probably want to use in your stew, so plan to make the stock ahead of time. When you are done cooking it, just let it cool then, put it in the refrigerator. Then you can easily remove the solidified fat from the top and leave only as much as you desire for flavor.
