I'm not one for following recipes too often. Usually, I just get creative with whatever I have in. I had leftover lamb from a roast dinner and would usually make a curry with the leftovers. Yesterday, we felt like something lighter. I had a lot of fresh vegetables available so I decided to make some wraps.
I roasted courgette (zucchini), aubergine (eggplant), a yellow pepper, a red onion and some cherry tomatoes with a little oil. After 15 minutes, I added the cubed meat, two finely chopped cloves of garlic, a sprinkle of paprika and some black pepper.I served this mix into warmed tortilla wraps along with a side salad of lettuce, cucumber and grated carrot. I also added a good dollop of soured cream for dipping.
The children loved this meal and it was a great way of using up the leftover lamb.
