Grilled Lamb Sweetbreads - Turkish Sweetbread Kebabs

- 500 g lamb sweetbreads
- 2 tsp cumin
- 2 tsp chili flakes
- 2 tsp paprika powder
- 1 tsp dried thyme
- 1 cup yogurt
- 3 tbsp olive oil
- 2 tsp salt
- Roasted tomatoes and lavash to serve
- Trim the hard tissues, wash and rinse the sweetbreads and pat dry
- Cut the sweetbread into small cubes
- Add cumin, paprika, chili flakes and thyme into a bowl
- Mix with yogurt and oil to prepare the marinade
- Add the sweetbreads into the bowl, mix to combine
- Cover and let it rest in the fridge for at least 3 hours
- Thread the marinated sweetbreads onto the skewers
- Prepare the BBQ on medium fire
- Grill the sweetbreads brown and nicely charred, rotating occassionally to grill evenly
- Serve with lavash, add more spices (cumin, chili flakes) and salt to taste
