Recipe Lemon and Thyme Roast Potatoes

A simple as can be, these roast potatoes taste delightfully of lemon. They make a good accompaniment to fish.

Ingredients
(serves 2-3 as a side)
300g new potatoes (cut into halves or quarters depending on size)
Zest of one lemon
Juice of one lemon
5 or 6 thyme sprigs
4 tbsp olive oil

Method
  • Place the potatoes into a bowl with the zest, juice, thyme sprigs and 2 tbsp of oil. Mix thoroughly, cover and leave to marinate overnight at room temperature.
  • Heat the oven to 180C. Tip the potatoes and marinade onto a baking tray and drizzle with remaining oil.
  • Sprinkle with salt and cook for 45 mins or until the potatoes are tender.
