Tinned artichokes
Cream cheese
Pesto
Fresh basil leaves
Fresh lemon
Light olive oil
Plumb tomatoes
Bread, sliced for toasting.

Method

  • Marinade the artichoke hearts in a mix of freshly squeezed lemon juice and olive oil, while you make the toast and assemble the other ingredients.
  • Make the toast and spread it with the cream cheese then some pesto.
  • Top with basil leaves, tomato slices and the artichoke hearts which have been sliced in half.
  • Drizzle with the lemon and olive oil dressing.

One of the great things about artichokes is that they are very low calorie. Did you check the cals on the tin?
