Recipe Lime Pickle

Some time ago we were given a large bag full of limes so I decided upon my first attempt at making lime pickle.

This is it:

Ingredients
  • 12 whole fresh limes
  • 3 tablespoons lime juice
  • 1 tablespoon sea salt
  • 2 tablespoons olive oil
  • 2 teaspoons black mustard seeds
  • 8 garlic cloves, crushed
  • 2 teaspoons pureed ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 - 2 teaspoon chili powder (or to taste)
  • 100 ml warm water
  • 2 teaspoons sugar
  • 2 tablespoons balsamic vinegar
  • 2 - 3 drops red food colouring (optional)

Method

Cut each lime into 8 wedges. Place in a jar with the lime juice and sprinkle the salt over them.

Mix well then cover the jar and leave in the sun for at least 2 weeks shaking the jar regularly.

Heat the oil in a saucepan over medium heat. Add the mustard seeds and stir fry for 30 seconds or until the seeds start to pop. Add the garlic, ginger, ground cumin, ground coriander and chilli powder.

Stir fry for about 30 seconds.

Add the limes, water, sugar and vinegar and bring to the boil.

Reduce heat to low and simmer, stirring occasionally, until the mixture is thick. Add the food colouring (if used).

Spoon into sterilised glass jars.

When cool, store in the refrigerator for at least 1 week before eating.

I've just located an image of the "large bag full of limes" - they were kaffir limes.

This afternoon a friend arrived with these. I cannot see any reason why they could not be used together for more lime pickle?

Very little sun again today. Maybe I should line a cupboard with tinfoil and install a 150 watt bulb. It worked in the 70's.
 
I'm a great fan of Pataks lime pickle but I'll look out for @Yorky 's lime pickle next time I go to the supermarket!
 
We are able to obtain Patak's in Thailand but not in Nakhorn Nowhere. We need to order from Bangkok.

I wouldn't spend much time looking for Yorky's in UK supermarkets if I were you. :wink::wink:
 
I'm a great fan of Pataks lime pickle but I'll look out for @Yorky 's lime pickle next time I go to the supermarket!

Someone obtained this "mixed" pickle for me earlier this year. S'all gone now, of course.

That was a view from the bar. There is no internet access at that bar which means people speak to each other!
I only have my chooks to speak to :( so I don't mind having internet access. In fact, it is quite nice actually having internet. For the first two months here, not only was I alone, didn't have the chooks but I also had very precarious access to the internet and phone, via a mobile phone hotspot which in fact should not have had a signal at all. This area is too rural for mobile phone signals on all but 1 network (which specialises in rural access) and even that 1 network only as marginal access here. So at the moment having had internet and phone for the last 6 weeks, (on and off) I am rather enjoying it! At least I can pretend I get someone to talk to during the day!
