Another much loved recipe from Fiji, for morning or afternoon tea.
Ingredients
3 cups plain flour
1 cup brown sugar
1 tbsp activated yeast
3/4 - 1 cup warm water
50gms melted butter
2 cans good quality coconut milk
Method
Combine dry ingredients, then mix in water and butter to make a dough. Knead dough on a floured surface, sprinkling on extra flour as needed (dough will be slightly sticky to start) for 5-10 minutes. Place dough in a bowl lightly oiled with coconut oil. Cover, and place in a warm spot for 1-2 hours till dough has roughly doubled in size. Push air out of risen dough, and divide in to 6-7 pieces and roll in to ball shapes. Place in a large enough pot, then pour in coconut milk till nearly but not quite covered. If needed, add a little water to get to right depth. Bring to boil, then simmer slowly for 30-40 minutes, being careful initially not to move dough balls around too much until they begin to set. Remove and allow to cool a bit before serving, or they are still nice served cold.
