Recipe Low gluten Piadina

This recipe was inspired by a local recipe found on the website Coolinarika, under the title Piadina Romagnola.

Ingredients:( the full quantity, I did a half quantity)

500 g flour ( I used spelt)
6 g of guar gum powder
170 ml tepid water
70 g lard (I used about the same quantity peanut oil)
Salt to taste ( I used 3 pinches)
1 teaspoon of soda bicarbona

Method:

Combine to a firm consistency. Let rest for 30 minutes.
Divide into smaller parts (8). Roll out to about 5 mm thickness. Use a fork to poke through and bake on a preheated pan, each side for around 2 minutes.

Fill each Piadina with desired filling, I used turkey ham and tzatziki, for example, and fold over in half, if doable. To me, as mine came out as mini Piadinas, putting one on top of the other, with the fiiling in between might have been an option.

Trying out this recipe with different flours is my warm wish.
