Tallow has fallen out of favor with the introduction of plant based oils and the hydrogenated versions of same. It's not hard to extract from fat!

You could probably use a meat grinder and maybe increase the yield but I wanted to stick with common kitchen tools.
Dice your fat into cubes. I cut mine into pieces a bit less than 1/2". Put in a wide bottom pan on the stove and add the water. Turn the heat to medium and add on your cubed fat.
You'll have to stir it a bit to keep it from sticking. Once the pieces start getting really brown you're pretty much done. At that point you're not extracting tallow you're cooking the pieces in it.
I got a tad over 7 oz. from the lb. of fat that had some meat left on it.
You also get all these crispy bits!
Now that it's cooled a bit in the fridge it's looking pretty good!
