Mish-Mash
This is very easy for cooking and with the right ingredients is an amazing dish. Very popular in Bulgaria and it is some kind of omelette but not exactly.

2 onions chopped.
1 green bell pepper chopped
3 red bell peppers chopped
3 tomatoes cubed
2 minced garlic cloves if you want
8 eggs
350 grams Bulgarian white cheese or feta cheese (crumbled)
3 tablespoons oil
parsley
black pepper

Heat the oil in your frying pan medium heat. Add the onions and peppers and cook until onions and peppers are softer. Add tomatoes and cheese and stir. Break and mix the eggs and add the eggs to the pan and cook and stir until the cheese has melted and eggs are ready. Put a little black pepper and salt. be careful with the salt, because some white cheese it has a lot of salt. Serve hot sprinkle with fresh parsley.
This is the original recipe but you can experiment as much as you want. I add garlic, mushrooms carrots and even bacon some time.
 
Eggs are a favourite food of mine and this sounds good. I've not come across Bulgarian white cheese but I'm assuming it is salty and tangy like feta?
