Moules Marinière (French style creamy mussels)

Ingredients:
- 2kg mussels
- 1 onion (chopped)
- 2 shallots (chopped)
- 2 cloves of garlic (chopped)
- bunch of celery stalks and leaves (leaves chopped)
- 1 carrot (diced)
- 1 cup of white wine
- 2-3 bay leaves
- handful of thymes
- 50g butter
- 1 tbsp olive oil
- salt and pepper to season
- parsley to garnish

- 1 cup of white wine
- 2-3 bay leaves

Method:
- First of all, make sure the mussels are fresh. Tap them with your fingers to see if the open mussels close their shells. If not, discard!
- Wash and rinse the mussels and set aside.
- Chop the onion and the shallots.
- Melt the butter in a pot and add the olive oil.
- Add the onions and shallots. Sweat them for 2-3 minutes.
- Bind together the bay leaves, thyme and celery stalks and add them into the pot.
- Add 1 cup of white wine
- Add salt and pepper to season
- Once the wine evaporates, discard the bay leaves, thyme and celery
- Add the carrots and continue cooking for 3-4 minutes
- Add the mussels and the chopped celery leaves. Give it a quick stir.
- Cover and cook for 2-3 minutes on low heat
- Garnish with chopped parsley prior to the serving.
