Ms. Mofet’s Black Bean and Corn Salad

1/3 C. Fresh Lime Juice
1/2 C. Olive Oil (or oil of choice)
1 Clove Garlic, Minced
1 tsp. Salt
Ground Peppercorns - To Taste
1/4 - 1/2 tsp. Favorite All-Purpose Seasoning - To Taste
1 (19 oz. can) Black Beans - rinsed and drained
≈1/2 C. Fresh Corn Kernels Cut Off Cob (≈2 Med. Ears) (OR 11 oz. niblets corn)
1/4 C. Red Bell Pepper, Chopped
1 Lg. Tomato, Chopped (or ≈ 12 multi-color cherry tomatoes - halved)
1/4 Lg. Red Onion, Small Diced
1/4 C. (≈4 - 6) Scallions/Green Onions, Chopped
1/2 C. Chopped Fresh Cilantro

1 Avocado - Diced and splashed with lime juice - Optional - added at service

Directions

Place lime juice, oil, garlic, salt, peppercorns, and all-purpose seasoning in a small jar.
Cover with lid, and shake until ingredients are well mixed.
Combine beans, corn, bell pepper, tomatoes, green onions, and cilantro in a salad bowl.
Shake lime dressing, and pour it over the salad.
Toss salad to coat vegetables and beans with dressing.

Dice or slice avocado and squeeze some lime juice to coat.
Place avocado on top of the salad just before serving.
