Ms. Mofet’s Salsa (uncooked)
1 (28 oz. can) whole, peeled tomatoes (no seasoning added) – Undrained – roughly chopped
1 (4.25 oz. can) Diced Green Chilies (OR 1 - 2 fresh jalapeño (remove seeds & veins) - chopped small - or to taste)
1 (10 oz. can) (Ro-Tel) Diced Tomatoes & Green Chilies
1/2 green bell pepper - chopped small - or to taste
1/4 red onion - diced small - or to taste
1/2 bunch (≈ 3-4) scallions/green onions - sliced (green & white part) - or to taste
Hot sauce - to taste
Salt – to taste
Ground peppercorns - to taste
Lime juice - To Taste
Fresh cilantro - chopped fine - to taste
Add the first 6 ingredients and tomato liquid to a bowl.
Season with hot sauce, lime juice, salt, and peppercorns.
Stir in cilantro.
Refrigerate for several hours or overnight.
Taste and adjust seasoning if needed.
Serve with tortilla chips.
