🌹 🍉 Still trying to get it right.
This is a bread machine version. But you can make dough by hand or stand mixer. After first rise/proof follow below instructions/directions.
Ms. Mofet's Jalapeño Bagels (Bread Machine Version)
1 1/4 C. warm water (105°F - 115°F)
3 1/2 C. all-purpose flour (will need extra for kneading)
1 1/2 TBSP. sugar (or honey)
1 1/2 tsp. salt
2 tsp. active dry yeast
1/2 C. chopped jalapeño peppers
Red pepper flakes - to taste
Place the ingredients in the bread machine in the order listed above. Select dough setting.
Preheat oven to 425ºF.
When dough is done divide into 8 pieces.
Shape each piece into a ball.
Coat 2 fingers in flour and press your fingers into the center of each dough ball and stretch to make a hole.
Place on a lightly oiled cookie sheet.
Repeat with the remaining dough balls.
Allow formed bagels to rest covered with damp kitchen towel for 10 minutes.
Bring a large pot of water to a boil.
Reduce to simmer. Use a slotted spoon or "spider" to lower the bagels into the water.
Boil 2 - 4 at a time without crowding pot.
Let them boil for 1 minute and then flip them over to boil for another minute.
NOTE: If you like chewy bagels like I do boil 2 minutes on each side.
Place boiled bagels onto a lightly oiled baking sheet.
Bake for 20 minutes or until golden brown.
Cool on a wire rack.
