Ms. Mofet's Meatloaf Surprise
Whole head cauliflower
1.5 lbs. - 2 lbs. Ground beef (amount of meat depends on how many servings you need)
1 pkg./envelope Beefy Onion soup mix
1 Egg
Below ingredients to taste:
Ketchup
Mustard
Hot sauce
Salt
Ground black pepper
Cheddar cheese - small dice or shredded - Optional
Dry porcini mushrooms - ground - Optional
Bell pepper (any color or combo) - diced sm. - Optional
Fresh mushrooms - chopped - Optional
Rolled Oats (uncooked) - just enough to hold meat together
Clean and lightly steam (stove-top steam basket or microwave) a whole head of cauliflower just till tip of knife can pierce and comes out easily.
Run under water to slightly cool.
Then mold the meatloaf around the slightly cooled whole cauliflower and bake at 425 °F oven till meatloaf is completely cooked. ≈ 45 min. - 1 hr. or meatloaf (meat layer) internal temperature is 160 °F.
