Recipe Ms. Mofet's Pickled Jalapeños

Ms. Mofet's Pickled Jalapeños

1 (1 Pt.) Wide Mouth Mason Jar

1 C. white vinegar
1 C. water
3 cloves garlic smashed
2 TBSP. sugar
1 TBSP. salt
4 - 6 jalapeño peppers, thinly sliced (remove seeds and veins if you want milder)
5 - 10 peppercorns - Or to taste

Combine the vinegar, water, garlic, sugar, and salt in a pot and boil.
Add jalapeño slices, stir, and remove from heat.
Let sit for 15 minutes.
Place the jalapeño slices into the mason jar.
Fill the jar to the top with liquid from the pot.
Store in the refrigerator until the next day before eating.

I love a good pickled jalapeño - I made them once several years ago with a bumper crop from the garden. I should try it again- they were so much better than the store-bought kind.

My neighbor gave me some pickled jalapeños a couple of years ago, and the were nice, very crisp. The store-bought ones are always mushy.
