No-knead bread or no-knead cake anyone?

I had this recipe thrust into my pocket by a friend about a year ago about no-knead bread and baking it is a pot , but I have no luck in finding the recipe, and my friend can't remember and is now living in Southeast Asia, and have no access to her cookbooks.
Does anyone have a recipe or know where to look?
It was for both gluten-free, low carb as well as normal bread , I am mostly interested in the low glycemic( low-carb( version and adaptations for gluten free.
Any help?
 
Usually no knead bread is bread that has no yeast in it. I make bread almost everyday, so if you mix the flour water, baking powder, or baking soda, salt, and just mix everything together, that will be good enough to make bread, but the bread won't swell up like bread with yeast.
 
the no-knead recipe I have for bread is for irish soda bread.
For a slightly lighter version, we use a 50:50 mixture of wholemeal flour and white self raising flour

Do you ever put any type of butter or margarine (vegetable butter) into your bread dough?? There's this nearby bakery that makes the most awesome smelling fresh bread. It smells and tastes like they put tons of butter into it
