There are various ways of doing this, but this is a very simple and pleasing little salad.
1 large (or 2 small) beetroot(s)
2 stalks celery
1 large orange
French dressing
Chop the beetroot and celery and place in a salad bowl. Grate the orange peel and squeeze the juice into the French dressing and mix well. Whirl everything around and all done!
An alternative is to use mayonnaise and put in some walnuts, which produces a variant of a Waldorf salad (a few sultanas can be used in this case, too).
The orange juice and rind add a delightful citrus zing. It that's not zingy enough, a lime can offer a little extra.
