Ingredients
250gms baby spinach leaves
180gms haloumi sliced
2 large onions blended
8 cloves garlic grated
Large knob ginger grated
2 large green chillies chopped
1 ripe tomato chopped
1 1/2 tsp freshly made garam masala*
Fresh cream to taste
4 dried curry leaves
1 tsp fenugreek seeds
Juice 1/2 lemon
*Garam Masala: Cardamon pods, cinnamon stick, black peppercorns, nutmeg, cumin seeds, coriander seeds, whole cloves dry toasted then ground
Method
Pan fry haloumi pieces till golden then place aside. Fry fenugreek and curry leaves in a little vegetable oil. Add minced onion and fry for 2-3 minutes. Add ginger, garlic, tomato, and 1tsp garam masala and fry further 3-4 minutes. Add spinach leaves and wilt down, then allow to cool. Place spinach mixture in processor with juice of one lemon, and green chiilies and blend. Fry blended mix till simmering then add cream to taste with another 1/2tsp garam masala, before adding haloumi back to spinach mix to warm through, then serve.
