How to Clean Squid & Simple Pan Fried Calamari Recipe

- 1 kg fresh squid / calamari
- milk to tenderize
- parsley (chopped, ¼ cup)
- 1 red chili pepper
- 100 g cherry tomatoes
- 50 g black (kalamata) olives
- 1 clove of garlic
- 3 tbsp extra virgin olive oil
- Salt to taste
Instructions:
- Gently score the squid in both directions without cutting it deeply
- Rub off the large suckers from the tentacles,
- Trim the tough broad side of the wings which connects the wing to the body
- Soak the squid in milk for 2-3 hours to tenderize
- Wash, drain and pat dry the squid
- Finely chop the chili, garlic and parsley
- Mix the chili and the garlic with the olive oil and set aside
- In a bowl, drizzle half of the chili oil over the squid and rub to coat
- Roughly chop the olives and the cherry tomatoes
- In a very hot pan, sear and grill the squid max 2 minutes each side
- Also add the tomatoes and the olives and sauté for 2 minutes
- Serve on a plate with the sautéed tomatoes and the olives
- Drizzle the remaining chili garlic oil on top, garnish with the chopped parsley
