So is anyone else having pancakes tomorrow and if so what do you put on them.
We traditionally have pancakes with lemons & sugar, though I alter the pancake recipe a touch to include some hemp flour which adds a little body to the pancakes and mix in some limes with the lemons for squeezing over the pancakes as they are served.
I usually make a 3 egg mixture for 2 hungry people. (4 eggs for 2 exceptionally hungry people) and find that typically twice the flour given below is needed if you can't allow it to stand for any length of time.
4-8 oz self raising flour
2 eggs
1/2 pt milk (any milk, works well with soya/oat/nut milks)
1 oz caster sugar.
Bung everything in a liquidiser and blend till smooth.
