Pasta and Raw Courgette Salad

Prep time: 10 minutes

Cooking time: 4-15 minutes

Servings: 1 as a main meal, or 2 as a starter or accompaniment


Ingredients:


2 oz pasta of choice (dry weight)

1 courgette

6-8 mint leaves, finely sliced

6-8 basil leaves, finely torn

2 tsps lemon juice

½ red chilli, finely chopped

Salt and pepper, to taste

1 tbsp Mascarpone


Method:


Cook the pasta according to pack instructions, drain and place on plate.


Peel the courgette into long, thin strips. Season with the salt and pepper, mint, basil and red chilli, and place on the bed of pasta. Sprinkle over the lemon juice and top with the mascarpone. Can be served warm or cold.


Notes


You may want to adjust the amounts of mint, basil and chilli, according to taste. This dish is quite fragrant and, depending how hot the chilli is, can have a ‘bite’.

I like the idea of this with all the herbs... but I have an aversion to raw courgettes. I don't know why but in general I'm not keen on courgettes even when cooked. I adore marrow, its larger cousin, but that doesn't work so well raw. Hmm...
