Ingredients:
2 heads of garlic, roasted
50 gms strong cheese (Manchego, Cheddar, Provolone piccante)
20 gms cream
1 tsp Spanish paprika
Extra virgin olive oil
Method:

Method:
- Squeeze the roasted garlic from the skin and mash with the back of a knife, until smooth
- Grate the cheese on a fine grater and mix with the garlic, cream and paprika. Add a good splash of oil to ensure a creamy paté
- Grind a little black pepper over the top and add a sprig of parsley to decorate.
