Peppered Yam, Bacon, Tomato and Cherry Soup:

Ingredients:

1) Yam, medium sized - 1/2, divided
2) Tomato, Roma - 1
3) Tomato Sauce - 15 to 16 Oz.
4) Bacon - 4 slices
5) Cherries, sweet - 20, divided
6) Sun dried tomato, julienne cut - 2 tblspns.
7) Black pepper - 1 to 2 tspns.


Procedure:

1) Cut a medium Yam in half and store one half away.
2) Using a Y peeler, shave off the skin.
3) Chop the yam into 1/4 inch pieces.
4) Chop up the bacon.
5) Remove the stems and pits from the cherries by halving them.
6) Grind up 1/2 the yam pieces and 1/2 the cherries.
7) Combine tomato sauce, ground yam and ground cherries in a pot.
8) Heat and simmer at 275F for 15 minutes.
9) Stir in the bacon, yam and cherry pieces, and sun dried tomato.
10) Continue to simmer at 175F and stir in the pepper.
11) Simmer until yam and cherry pieces soften and bacon is cooked.
12) Ladle into soup bowl(s) and serve.
