Ingredients:
1 kg tomatoes, preferably green
1 medium onion
4 cloves garlic (one for each 500cc jar)
1 tsp salt (per jar)
1 tsp peppercorns (black, white, red, green) per jar
1 tbsp sugar per jar
500 mls white vinegar
500 mls white wine vinegar
few sprigs of oregano
few basil leaves
Method:
1 kg tomatoes, preferably green
1 medium onion
4 cloves garlic (one for each 500cc jar)
1 tsp salt (per jar)
1 tsp peppercorns (black, white, red, green) per jar
1 tbsp sugar per jar
500 mls white vinegar
500 mls white wine vinegar

Method:
- Wash the tomatoes and thinly slice the onion.
- Slice each clove of garlic into thin strips and place in the jar along with the salt, peppercorns and sugar. Now add the tomatoes, interspersed with a few slices of onion, until the jar is almost full.
- Heat the vinegars together with the herbs and pour over the tomatoes in each jar. Seal tightly with lid.
- Leave for 2-3 weeks before consuming.
