2kg chicken drumsticks
10 cloves of garlic
1 red capsicum / bell pepper or bullhorn chilli
3 smaller red chillies with some heat. Use what you like to customise the heat level
2 lemons - zest and juice
1 tablespoon smoked paprika
1 teaspoon ground allspice (I find it close in flavour to cloves if you need to substitute)
1 teaspoon ground black peeper
2 teaspoons salt
1/4 cup olive oil
Chopped parsley to garnish
Peel the garlic, zest & juice the lemons, seed the large pepper.
Add everything except the chicken to a food processor & blend until reasonably smooth marinade
Reserve 1/4 cup of marinade and use the remainder to marinate the chicken.
Marinate the chicken at least 4 hours or overnight in the fridge - adding in the zested & juiced lemon remains
Pre-heat oven to 200°c
Tip everything into a baking tray and bake for one hour.
At this point you can use the reserved marinade to baste the chicken, then place the baking tray under the grill part of your stove or char on the BBQ. Those lemon pieces will be jammy & delicious. Trust me.
Another option is to remove the cooked chicken from the oven, chill it down and grill it, basting with reserved marinade, when you are ready to eat. I believe this would be a good BBQ entertaining dish.
Personally I would love chopped coriander/cilantro as the garnish but I live with haters.
