Recipe Pulled Pork Sandwiches

These pulled pork sandwiches are remarkably easy to make - they take a while, but most of it is hands-off time. I like to make them in the summer, but they’re good all year round.

Ingredients:

1 pork butt, roughly 5 lbs (shoulder roast)
1/2 cup dijon mustard
1/3 cup packed dark brown sugar
2 tbsp coarse salt
1 tbsp ground black pepper
2 tsp smoked paprika
1 tsp cayenne pepper
3 cloves garlic, minced
2 cups water
Bbq sauce, whatever kind you like - roughly 2 cups (I don’t measure, just add it until it’s as saucy as I like)
Soft rolls, for serving

Mix together the mustard, sugar, salt, pepper, paprika, cayenne pepper, and garlic. Smear this mixture all over your pork butt. Let sit for at least 1 hour, up to overnight.

Place the pork butt on a rack set over a roasting pan. Pour 2 cups water into the pan, cover the whole thing with foil, and cook at 300 degrees for 6 hours. Baste hourly.

Remove pork from oven and shred using two forks or your fingers if you’re classy like me. Add the bbq sauce until it’s as saucy as you want it. If there’s any drippings still in the bottom of the roasting pan, throw those in there too.

Serve on buns - coleslaw is a nice accompaniment.

Makes 4-8 sandwiches, depending in the size of your pork butt.
