Well now that the results are in for the different pumpkin recipes, I thought I should share my own little recipe. Pumpkin fritters are a popular treat in my country. However, I recently found this recipe which not only contains pumpkin for making the fritters, but sweet potato as well. These can be eaten with breakfast, or served as a side dish with dinner.
Ingredients:
1 cup grated raw pumpkin
1/2 cup crushed cooked potato
1 cup flour
1/4 cup sugar
1/2 teaspoon spice
1/2 teaspoon baking powder
2 teaspoons melted shortening
1/4 teaspoon salt
Milk to mix
Fat for frying
Method:
Sift flour, salt and baking powder.
Add sugar, spice, crushed vegetable and shortening
Blend in milk to make a thick batter
Fry by spoonfuls in hot fat
Drain and serve hot
