This can be eaten in a couple of hours.
It will keep a couple of days in the fridge.
It's more a process than a recipe, amounts are really flexible
Ingredients
Choice of (either one or a mix)
Cucumber
Onion
(Carrots work as well)
Thinly slice them
Put in a bowl and add a little salt to taste and to help wilt the veges somewhat
Since it is a quick pickle, the salt is not acting as a preservative
Cover with a hot half vinegar, half water mixture.
Let cool & put in fridge
Ready to eat in 2-3 hours.
You can add peppercorns, coriander, cumin, mustard seeds, garlic, turmeric and/or chili to the vinegar/water mixture.
Or even sugar if you want.
