Ingredients

1 French trimmed rack of lamb (ask your butcher to do it for you)
Herb breadcrumbs (you can buy them ready made)
½ can of GUINNESS® Draught
Dijon Mustard

This is something special. It looks stunning when finished and it's really easy to make. Have it on a quiet night in with someone special and you're sure to impress or even better, persuade someone special to cook it for you.

Method
  • Put the lamb and the GUINNESS® into a bowl, cover and allow to marinate in the fridge for 6 - 8 hours.
  • Take the lamb out and coat it with the mustard.
  • Press the lamb into the herb breadcrumbs. The crumbs will stick to the mustard and make a nice crust. Then simply roast in the oven at 200° C for 20 - 25 minutes.
  • Serve with roast vegetables and champ potato.
Delicious.

TIP
GUINNESS® is the only beer that really makes this work. The glaze on the lamb is as rich as you'd expect from red wine.

I have to agree, my husband would love this recipe too. I'm going to get some lamb for next weekend and try it. Now if he'll let me have one of his Guiness.

Guinness recipe no????????????. I actually think this would be quite good. Sadly, I don't have any lamb in my freezer. That said, I will wait to hear how things turn out with Morning Glory should she attempt this.
