Raspberry Wine Coulis:
NOTE: Fruit coulisses are easy to make and usually use water instead of a wine for the basic coulis, although a liquor can be added afterwards. For this coulis, a sugary sweet wine is used.
Ingredients:
1) Raspberries - 1 cup
2) Brown sugar - 1 tblspn.
3) Gewürztraminer Wine - 1/8 cup
Procedure:
1) Heat brown sugar and wine in a pan until the sugar melts.
2) Blend the raspberries and wine/sugar mixture to a puree.
3) Strain the blended mixture to filter out the liquid part.
4) Bottle and refrigerate until ready to use.
