A simple rice pudding with delicious creamy mascarpone and a crispy caramel top.
Ingredients (per individual serving)
25g pudding rice (use any risotto rice)
150ml milk
1 heaped tsp mascarpone
1 tsp honey (or to taste)

Method
- Simmer the rice and milk together until the rice is tender and the milk almost all absorbed.
- Mix in the mascarpone and honey.
- Place the mix into ramekins and top with a layer of sugar.
- Use a kitchen blow torch to caramelise the top.
- Allow to cool.
