Chicken with Orange Rosemary

- 1 kg Chicken whole with skin
- 2-3 Onions peeled
- 1 Garlic halved (large)
- 5-6 Orange slices
- Carrots – 15 round slices
- 4 Potatoes
- 50 g Butter
- 5 -6 cloves Garlic minced
- 1 tbsp Orange zest
- 1 tbsp orange juice
- 1 tbsp Rosemary Chopped
- 1 tbsp honey
- 1 tsp salt
- 1 tsp paprika
- 1 tbsp chili paste
- Add butter to a small bowl
- Add minced garlic, salt, chopped rosemary, orange zest, honey, paprika, chili paste and orange juice and mix.
- Flip the chicken over so that the breast is facing up.
- Pat dry chicken with a kitchen towel.
- Use your thumb between the skin and the flesh over the breast and the legs to make space to stuff the butter in. Spread half the butter under the skin and the remaining all over the chicken.
- When ready to cook, preheat the oven at 180°C / 350°F for at least 15-20 minutes.
- In a baking tray, layer the orange slices at the bottom.
- Add onions, garlic, potatoes and carrots then place the chicken breast side up.
- Roast for 80 mins in the oven
- Allow the chicken to rest for 15 minutes before serving.
