This recipe was given to my son by his elderly neighbour in Colonia Roma, Mexico City.
Ingredients:
5 or 5 tomatillos, husk removed
1 medium onion
1 handful coriander leaf (cilantro)
2-3 jalapeños, or serrano chiles if you like it hotter
salt
water

Method:
- Chop the onion in half and cut the hot peppers roughly. Leave the tomatillos whole.
- Place in a saucepan with the coriander leaf and the salt and barely cover with water. Bring to a boil, then simmer until the tomatillos change to pale green, about 15 minutes.
- Put all the veggies into a blender, add enough of the cooking liquid to make a sauce, and blitz.
