Recipe Shrimp Mozambique (Camarão à Moçambique)

Ingredients:
100 gms butter
1 medium onion, diced
6 cloves garlic, diced
1 cup beer ( no measurements, just add, drink, then add some more if necessary)
1 tsp saffron
1 tsp paprika
1/2 tsp crushed chile pepper (more if you like)
salt and pepper to taste
400 gms shrimp, tail on
Freshly chopped parsley to garnish

Method:
  • Melt the butter in a pan and add the chopped onion. Sauté gently for about 5 minutes until the onion is soft, then add the garlic, and cook for 2 more minutes.
  • Add the saffron, paprika, chile pepper, salt and pepper. Stir for 1 minute.
  • Pour in the beer and reduce by half. If there's not enough liquid, add more beer.
  • Add the shrimp to the mixture and cook until the shrimp are just cooked, about 3-4 minutes
  • Place in a bowl and serve with fresh bread. (In Portugal, they actually make saffron butter to spread on the bread.)
  • Instead of beer, you can also use white wine

Lovely - I particularly like the use of beer. We don't use it enough in recipes and particularly not on fish/seafood recipes. A lot of people think you need to 'bloom' saffron before using. But if you are cooking it in a wet mixture (as here) you really don't need to. I like the simplicity of this recipe.
