Recipe Small Chicken Pot Pies.

These are small individual pot pies. This is my own recipe.

Ingredients;

2 teaspoons butter.
3 teaspoon oil.
1/2 cup each, chopped;
Onion' Green pepper, Celery.
3 Teaspoons flour.
1/2 t. each;
Salt, Black pepper, Garlic powder, Onion powder, Basil Seasoned salt.
1-1/2 - 2 cups chicken stock or water.
Few drops browning sauce (Gravy master or Kitchen Bouquet)
1 cup frozen mixed vegetables
2 russet potatoes, peeled & cubed.
1 half chicken breast, boiled, diced.
1 box (2) refrigerated pie crusts.

Directions;

Heat butter & oil in 5-qt saucier over medium low heat. Add chopped veggies & sautee. Cover to sweat.
Sir occasionally to avoid burning. Ad flour. Stir to incorporate. Add diced chicken, frozen mixed veggies & cubed potatoes. Add browning sauce seasonings. Sir to incorporate. Cover & let simmer for about 15 minutes.

Add mixture to 4 individual pie plates. Cover with pie crusts in your favorite pattern. Bake in preheated 350 degree oven until crust is brown & gravy is bubbling. Serves 4. Enjoy!! :wink:

I love individual chicken pot pies. Have to admit I buy the frozen ones for lunch from time to time.
 
When I read the title, I keep thinking "but where do I get small chickens?"

No, they are in pie plates. They've come that way as long as I can remember and that's 50ish years. Maybe they started out in pots, but somewhere along the way got switched to pie plates for ease and convenience of making? To make it even more confusing, sometimes they come with top and bottom crusts, and sometimes just with a top crust like @Shermie 's.

I just realized something looking at the recipe. Shermie, did you leave out some kind of liquid maybe?
 
I love steak n kidney pies, I think I'll try your recipe but substitute for steak n kidney. And lots of pepper.

You can substitute whatever meat that you like. it is very versatile. Ground beef, turkey, beef tips, lamb even veal or smoked meat. It does not discriminate. :wink:
