Sofrito

Many Latin cuisines use sofrito in their cooking. Sofrito is a base that is the beginning of many dishes and there are numerous combinations of ingredients which vary by the dish being made. I use sofrito in my Cuban style black beans. Italians also use sofrito. Do you make any dishes that require a sofrito?

Hmm, the first two that come to mind are Arroz con pollo, and Mofongo con Camarones

I don't think I ever made sofrito. Mirepoix, yes but not sofrito.
